Prepare chicken & refrigerate for 30 minutes. Drizzle red potatoes & butternut squash with spices. Toss pepitas with maple syrup & seasonings!
Toast pepitas in a skillet until golden brown. Remove from heat. Preheat oven to 375 & sear chicken for 4-5 minutes. Flip & cook 5 more minutes.
Cook onions & garlic. Add wine & then cook vegetables. Add orzo & toast. Add remaining ingredients & mix. Add chicken & cover.
Bake for 15 minutes. Uncover & bake for another 10 min. Let rest & sprinkle pepitas, cranberries, & goat cheese on top!
