Line a large plate or platter with parchment paper. Add dry ingredients to a bowl. Add butter, sugar, honey, & vanilla. Using paddle attachment, beat until light and fluffy.
Add egg and mix on low until incorporated. Slowly add dry ingredients. Roll cookie dough into a ball and then flatten. Press one side of cookie into sprinkles. Add to lined plate.
Cover cookie dough and refrigerate for 1 hour. Preheat oven to 350ºF. Remove from refrigerator and transfer the parchment paper to the baking sheet.
Bake cookies for 12-14 minutes or until the cookies begin to turn a golden brown color. Let rest for 1 minute before transferring to a cooling rack.
