Prepare the ribs by removing the membrane from the back of the ribs. Massage the kosher salt and pepper into the rib meat and set aside. Prepare rib marinade.
Transfer ribs to a 9×13-inch pan. Pour marinade over the ribs. Flip the ribs meat side down, cover, and refrigerate for at least 1 hour or overnight for more flavor.
Preheat grill to 300ºF. Remove ribs from marinade. Rub dry rub into both sides of the ribs. Let sit at room temp for 15 min. Transfer to grill.
Grill according to recipe. Remove the ribs from the grill when internal temp reaches 195ºF. Let rest for 10 minutes and then serve!
