Make the green onion salad. Toss with dressing & sesame seeds. Refrigerate. Make the pork noodle sauce according to directions and set aside!
Season & cook pork until almost cooked through. Remove from pan & leave drippings. Add sesame oil & saute green onions & garlic.
Saute carrots & add pork. Add sauce. Take pan off heat & prepare noodles. Once cooked, add back to heat & add starchy water. Allow sauce to simmer & thicken.
Add the warm noodles to the skillet and toss with the sauce. Sprinkle the noodles with sesame seeds. Serve topped with the green onion salad.
