Prepare

Prepare steak marinade. Set aside. Season steak & then pound to an even thickness. Transfer to a baking dish & cover with marinade. Refrigerate.

Saute

Prepare rice and then let rest before fluffing. Add onion to a heated skillet. Saute and then add garlic, green pepper, salt, beans & fajita seasoning. Saute.

Sear

Sear steak in a cast iron skillet until internal temp. reaches 135ºF. Remove and let rest before slicing. Add cream cheese, Greek yogurt, cotija, and Tapatio to a bowl and mix.

Assemble

Add cream cheese mix to tortilla & then add rice mixture and steak. Tightly wrap each burrito by folding the sides in and rolling.
